grill accessories are slightly different from the barbeque variety.
You see, charbroiling is a fast cooking style over high, direct heat.
This contrasts markedly with the slow, indirect heat favored by barbeque
enthusiasts. In fact, there is a heated debate over whether charbroiling
should even be mentioned in conjunction with barbeque. The only resolution
this debate has arrived at so far is to ensure that everyone can mentally
connect the two terms, which I believe is counter to the idea the people
who started it had in mind. But who am I to judge? I’m just a
voice on the internet.
When you are using your grill for charbroiling, your grilling accessories
are more of the moisture saving and heat utilizing variety. For instance,
when you charbroil you may want to baste the meat initially to help
form the protective barrier that charbroiling is intended to create.
This barrier will prevent your meat from leaving all of its moisture
out on the grill, and tasting a bit like wood grain on your plate.
Another important charbroil grill accessory is your grill brush, even
more so than with barbequing, charbroiling leaves large quantities of
charred meat on your grill. You can help minimize this by oiling the
grilling surface prior to cooking, and again after the grill has been
cleaned and has cooled down. The cleaning part is the rub, you really
need to scrub all the charred meat you can from your grill after every
use, it will build up surprisingly fast if you do not.
